To make a rustic wedding cake you will need the following ingredients.

For the biscuit:

  • flour - 1 glass;
  • sugar - 1 glass;
  • milk - 100 ml;
  • egg - 1 piece;
  • sunflower oil - 50 ml;
  • cocoa powder - 3 tablespoons;
  • baking soda - 1 teaspoon;
  • baking powder - 1 teaspoon;
  • vanillin - 1 teaspoon;
  • salt - 0.5 teaspoon;
  • hot water - 100 ml.

For buttercream:

  • cream - 1 glass;
  • powdered sugar - 1 tablespoon.

For the buttercream:

  • butter - 1 pack;
  • condensed milk - 200 g.

For the ganache cream:

  • chocolate - 60 g;
  • cream - 60 ml.

The amount of ingredients is calculated for 1 cake.

  1. Separate the white from the yolk. Beat the egg whites with a blender.
  2. Mix all dry crust ingredients. Stir so that there are no lumps. Use a whisk when mixing.
  3. Add the yolk to the vegetable oil and combine with milk.
  4. Add the mixture to the flour and cocoa, mix well with a spoon.
  5. Knead the dough, then add the egg white.
  6. Pour in half a glass of boiling water. You will get a liquid dough similar in consistency to sour cream.
  7. Take a round baking dish, pour in the dough and place in an oven preheated to 180 degrees for 40 minutes.
  8. Cool the cake on a wire rack, turning the convex side down to level the surface.
  9. Bake the second cake.
  10. While the cakes are cooling, prepare the buttercream. Take cream, half a spoon of vanilla and a heaping tablespoon of powdered sugar. Beat at highest speed until the cream begins to thicken. To avoid cream separation, reduce mixer speed.
  11. Cut the cakes in half. Since the cakes do not need impregnation, you can proceed straight to assembly.
  12. Brush the halved cake with cream. Cover with the other half of the cake. Do the same with the second cake layer.
  13. To decorate the edges you will need 200 g of butter and the same amount of condensed milk. Soften the butter with a whisk. Add condensed milk. Butter cream has a dense structure, so it is traditionally used to level baked goods. Grease the top and sides of the cake.
  14. Use ganache cream for decoration. Pour hot cream over the chopped chocolate and leave for 5 minutes. Mix thoroughly. Using a pastry syringe, make chocolate drips on the cake around the circumference of the top layer. Make a border at the base of the cake.
  15. Decorate the top of the cake with strawberries.

Super moist chocolate cake is ready. It has a moderately sweet taste and delicate texture. Even a beginner can handle the preparation. A rustic wedding cake, as in the photo, will fit perfectly into the wedding concept.

Step by step

  1. Let's make gingerbread cake with berries, cinnamon and buttercream.
  2. Combine flour, baking powder, ground ginger, cinnamon, ground nutmeg in one bowl and mix them well.
  3. In another (weigh an empty cup and remember), beat eggs (2 pcs.) with sugar (100 g), do this for 3-4 minutes so that the mass increases significantly in volume.
  4. Melt the butter (125 g) in a saucepan, let cool slightly and add cream (100 g) and milk (150 g).
  5. Alternately add the dry ingredients and the liquid from the pan to the egg mixture. Beat well with a mixer.
  6. At the end, add 100 grams of honey or aromatic maple syrup.
  7. I made the cake in 16 cm pans. Three cakes came out. To do this, grease the mold with oil and sprinkle with flour. You can put a circle of parchment on the bottom. Place a third of the dough into the pan. This is why we weighed the empty cup. Now you can find out the mass of the dough and divide by three.
  8. Bake at 175 degrees for 20-30 minutes. The top will turn golden and the skewer will be dry. Remove from the oven and let cool on a wire rack, first in the pan (5 minutes), then turn the cake over and let it cool on the wire rack on its own.
  9. The shortbreads will be 1.5-2.5 centimeters high.
  10. Now you need to prepare the cream for the cake. We will make cheese cream. And here is the most important and only rule for you - very cold curd cheese, very soft butter.
  11. That is, it is better to keep the cheese in the refrigerator all night so that it is cold and hard enough. On the contrary, keep the oil in the kitchen on the table for a couple of hours (overnight) so that it becomes soft and pliable. Only under such conditions will you get an excellent cream with a delicate texture and taste. The procedure is the simplest - put the ingredients in a bowl and beat with a mixer until smooth. This will take 5-7 minutes. Here's some advice that gets asked a lot. If the powder squeaks or you need a whiter color, do this: first beat the butter and powder with a mixer on high for 5-10 minutes. And only then he introduces cheese.
  12. Now you need to decorate the cake with cream. Transfer the cream into a pastry bag. And in order to remove the cap from the cakes, you need to cut it off with a knife (usually I use a cheese knife).
  13. What’s convenient about keeping the cream in a bag is that it doesn’t dry out and it’s very easy to make the layers of cream the same. Just spread the cream in a spiral.
  14. Assemble the tower and add cream on top, on which we place the berries, in this case cherries and candied blueberries. If you want to make the same cake from the sides, generously coat the outside with cream (pipe from the bag), and level with a spatula or spatula.
